Pink Lemonade Cake

Jenn came to visit us last week (our very first overnight guest!), and she and I decided to do some baking while she was here. I'd seen a yummy cake on the cover of a magazine a few weeks ago, and I'd been waiting for the perfect excuse to make it ever since then. So...we decided to make it to take to the lake house for Memorial Day.

It turned out really good! We didn't follow the recipe exactly because we used 8 inch pans instead of 9 inch, but it still worked out...just with a few extra minutes in the oven. We also had a good bit of frosting leftover, so I froze it and am thinking about making some lemon cupcakes to use that frosting up. Be forewarned....this recipe has A TON of butter and other fattening ingredients. It's definitely a cake for a special occasion! But, it's oh-so-good!! :)

Pink Lemonade Cake

1 cup (2 sticks) butter
4 eggs
3 1/2 cups all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
2 cups sugar
Red food coloring
1 1/3 cups milk
1/4 cup frozen lemonade concentrated, thawed
1 tsp. pure lemon extract
1 recipe Lemonade Buttercream

Allow butter and eggs to stand at room temperature for 30 minutes. Meanwhile, grease two 9x2 inch round pans. Line bottoms with parchment; grease paper. Flour pans, tapping to remove excess; set aside. In medium bowl stir together flour, baking powder, and salt; set aside.

Preheat oven to 350 degrees. In extra-large mixing bowl beat butter with mixer on medium to high for 30 seconds. Gradually add sugar, about 1/4 cup at a time, beating on medium until well combined. Scrape sides of bowl; beat 2 minutes more. Add 1/8 tsp. red food coloring; beat to combine. Add eggs one at a time, beating well after each addition.

In bowl stir together milk, lemonade concentrate, and extract (mixture will look curdled). Alternately add flour mixture and milk mixture to butter mixture, beating on low after each addition just until combined. Remove half (3 1/2 cups) of tinted batter; spread in one pan. In remaining batter in bowl, stir in 1/4 tsp red food coloring. Spread in second pan.

Bake about 35 minutes, until tops spring back when lightly touched. Meanwhile prepare Lemonade Buttercream.

Cool in pans on wire racks 10 minutes. Remove layers from pans; discard paper. Cool completely on wire rack. Trim off domed tops of layers so cake is flat. Cut each layer horizontally in half to create four layers. Brush crumbs from layers.

Place one dark pink layer, cut-side down, on a plate. Spread 1 cup frosting just to edges. Top with a light pink layer followed by another dark pink layer, spreading frosting on each just to edges. Stack final light pink layer, cut-side down; spread frosting on top and sides as desired. Makes 18 servings.

Lemonade Buttercream

3 cups (6 sticks) unsalted butter, softened
2 16 oz jars marshmallow creme
1/4 cup frozen lemonade concentrate, thawed
1 cup powdered sugar
2 tsp pure lemon extract

In very large bowl, beat butter with mixer on medium until light and fluffy, about 30 seconds. Add marshmallow creme and lemonade concentrate. Beat until smooth, scraping bowl sides. Add powdered sugar and extract; beat until light and fluffy. Use to frost Pink Lemonade Cake. Or store, refrigerated, up to 3 days, or freeze up to a month. Bring to room temperature before frosting cake. Makes 6 cups.

Our Busy Season!

We had a great Mother's Day celebrating with our moms!

Friday after work, we headed to Trussville for a couple of days. It was a nice change to see my family two weekends in a row! That night, Jenn and I made a pie for Mom as a Mother's Day dessert. We ended up running out to Publix twice because we forgot all of the ingredients the first time...oops! It was worth it though...that pie was yummy. Mom threw a small graduation party for Jenn on Saturday for lunch. It was a lot of fun! We ate hamburgers, several sides, and the best strawberry cake I've ever had from Edgar's Bakery.

That night, after eating pizza and a tiny sliver of pie (because we were so stuffed from all that food), Travis and I headed back home. We are both teaching Bible classes at church right now, so we had to be back in town by Sunday morning.

We ate lunch with Cheryl, Emily, and Melissa on Sunday. Travis is getting to be a pretty good grill master because the steaks were awesome! He's had his eye on a nice grill for a while (because we still haven't bought one), but he's waiting on it to go on sale. Hopefully we'll be able to get it sometime soon though!

Last night, with Alisha and Tyler back in town, we all ate supper at Phil Sandoval's. It was our first time to eat there, and it was really good.

Now after eating all that food this weekend, no wonder I felt like I needed to go running this morning! :)

I guess I'm unofficially a mom to the kitties, so of course they wanted to celebrate. In honor of Mother's Day, they left me a nice present to find when we got back home Saturday night. One of them had thrown up all over the carpet and rug in our living room...yuck! Luckily, we got it all cleaned up pretty easily. I think it must have been a combination of eating too much at one time + a hairball. Gross. They must have felt bad about it, though, because when we got home last night from supper and running a few errands, they'd left me a nice present on the bathmat in the guest bathroom. Yesterday afternoon, I "deadheaded" a few flowers in our flower beds, and I'd brought them inside and thrown them away in the trashcan in the study. Well, someone (probably Miss Gabby) decided to go digging in the trash, and she carried one of the flowers all the way from the study into the bathroom. Ha! What a silly cat. I guess I'd rather find dead flowers than the alternative though... :)

Speaking of our flower beds, flowers are blooming, and shrubs are growing...so I guess we're doing something right! It's really cool to go outside every day and see how all of the plants are growing and changing. Here are a few pictures so you can see for yourself!

As usual, our summer is starting to get really busy. We don't have a free weekend until mid-June! This weekend, we've got 3 parties/showers to go to between the two of us. Next weekend is Memorial Day weekend, and I'm hoping we can go to the lake for a couple of days with my family. Then the next weekend, we leave for Fripp Island! Can't wait for that! Not sure if I've mentioned this already, but we are going to stop in Savannah for the day before heading to Fripp. Neither of us has ever been, so we're looking forward to it. Any suggestions on things to do/places to eat? I'm thinking we'll definitely have to try Paula Deen's restaurant!

Well, that's about it for this update. We're just staying busy as usual! :)

Graduation Weekend!

This weekend was a special one! Two of our sisters, Jenn and Alisha, graduated from college!!

Alisha's graduation was on Friday night in Tuscaloosa, so we headed there first after leaving home. It was exciting to see how happy she was because I was feeling that same way about 2 1/2 years ago...no more nursing school!! :) Go Alisha!! She is still looking for a job, but I'm sure one will come up soon.

After graduation (and a few pictures), we all headed to Midtown Village for supper/frozen yogurt. It was great to be back in Tuscaloosa again, especially for such an exciting occasion!

After leaving t-town, Travis and I headed to Trussville for Saturday/Sunday until it was time to go to Jenn's graduation in Auburn on Monday. We had to leave the house at 6:30 AM to get down there in time! Jenn graduated with her degree in chemical engineering and is planning to work at UAB for a year before going to med school. She definitely got the brains of the two of us! :)

After eating lunch back at Jenn's dorm, she took us on a tour around campus before we went to a reception for all of the graduating Chem Es. We made sure to get some lemonade at Toomer's, of course! After the reception, we walked over to the stadium to see their new Heisman winner statues before heading back home. It was a great day!
